Since 2009, I’ve been trying to figure out how what I eat and how I feel are related. I stopped eating gluten a few years later and that made a big difference, but it wasn’t the whole answer. These days, I focus mostly on a paleo-ish diet, where I strictly limit processed sugar, lentils, beans, rice, corn, potatoes and dairy…but still enjoy my meals! It’s a challenge, but what isn’t.

Every weekend, I try to cook 2 or 3 entrees and a couple of vegetable dishes for the week. My plan here is to let you know what I’m cooking and how it turned out so that you don’t have to make the same mistakes I inevitably do!
